1 tablespoon vegetable oil
3 large sweet onion, diced
4 radishes, sliced 3/4 inch thick
3 cups shredded Swiss cheese
3 tablespoons chopped, pitted dried parsley
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon pepper powder
5 pieces shredded mozzarella cheese, divided for garnish
Heat oil in a large saucepan over medium heat. Fry onion until brown, about 5 minutes. Stir in radishes; cook about 2 minutes; add spinach, garlic, parsley and pepper powder. Pour sauce over chicken; sprinkle liberally with mozzarella cheese.
