1 tablespoon vegetable oil
1 onion, chopped
1 pound fresh celery, chopped
3 carrots, chopped
4 medium potatoes, peeled and cubed
1/2 teaspoon garlic powder
1/2 teaspoon dried chilli pepper
3/4 teaspoon dried parsley
1/2 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 teaspoon dried marjoram
1/4 teaspoon capers
In a large saucepan, heat oil over medium heat. Stir in onion and celery, carrots, potatoes, garlic powder, chilli pepper, parsley, salt, oregano, basil, marjoram and capers. Bring to a boil.
Stir or cover and cook over medium heat for 5 minutes. Reduce heat to low, cover and cook for 5 minutes. Serve hot or cold.
