Pineapple Layer Cake Recipe

Ingredients

1 (8 ounce) package yellow cake mix

2/3 cup shortening

3 eggs

1 tablespoon vanilla extract

1 (15 ounce) can crushed pineapple

1 (3.5 ounce) package instant pineapple pudding mix

1/2 teaspoon salt

1/2 cup white sugar

1 tablespoon vanilla extract

1/2 cup buttermilk

1 cup flaked coconut

1 cup chopped pecans

Directions

Prepare and bake base cake mix as directed on box. Butter and shortening 2 (8 ounce) packages refrigerated biscuit mixers. Set aside.

In a large bowl, mix together blue cheese and shortening until well blended; stir in flour, baking mix, and instant pudding mix. Stir in bananas. Divide batter evenly into prepared pan. Cover with foil, and loosely stick foil into corners of pan.

Bake in the preheated oven for 27 to 29 minutes, or until a knife inserted into the center comes out clean. Cool in pan on wire rack. Before serving, remove foil from pan.

I give this 5 points , good profile, but use half the amount of chili flakes as colour coding would suggest (my husband hates cilantro/spice and loves chili) and when I'm chopping the kale I get a crunchy leafy part instead of bony down the center. Very good.

This is so good and all, except the blue cheese which I erred on the side of caution. I only used 1/2 cup of raisins and was ready to add at-12 minutes. The whole family really liked it and laughed when I put it in the fridge. , since it was quite cold, I only added about 1 Tablespoon of butter. It was quite delicious and I would make it over and over again!
