4 cups fresh spinach, washed and dried
1 (16 ounce) container ricotta cheese
1 (20 ounce) package yellow cake mix
2 strips Italian cheese
2 tablespoons butter
1 pinch sugar
1 1/2 teaspoons lemon zest
In a large bowl, toss spinach and ricotta together.
In a medium bowl, combine cake mix, Italian cheese, butter and lemon zest. Mix gently for 30 to 60 seconds, stirring occasionally. When the mixture has thickened, stirring occasionally, gradually blend in lemon juice. Pour into salad bowl and toss. Store in refrigerator.
