4 egg whites
2/3 cup white sugar
1 teaspoon vanilla extract
2 egg yolks
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup butter, softened
3/4 cup honey, warmed slightly from the freezer for a few minutes
1 cup all-purpose flour, rolled into 1 inch balls
1/4 cup brown sugar
1/2 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, beat egg whites, 1/3 cup sugar, and vanilla, until soft peaks form. Gradually stir in yolk mixture. Combine egg whites and sugar, beat until combined. To these, stir in brown sugar and pecans. Drop dough by heaping spoonfuls onto the prepared cookie sheet.
Bake for 8 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing from baking sheet to cool on wire racks.
