2 tablespoons vegetable oil
1 onion, thinly sliced
1 small green bell pepper, thinly sliced
1 (10 ounce) can whole peeled tomatoes with juice
1 clove garlic, minced
1/4 teaspoon salt water
1 cup water
1 tablespoon vegetable oil
1 cup chopped cooked chicken breast meat
1 teaspoon sugar
1/4 teaspoon salt
1/3 cup light brown sugar
Heat oil in a large saucepan. Add onion, green pepper, tomatoes, garlic and salt water. Bring to a boil. Reduce heat to low. Cook, stirring occasionally, for 3 to 4 minutes, or until vegetables are tender. Reduce heat to medium.
Add chicken, tomatoes and garlic; bring to a boil. Reduce heat to medium-low, stirring occasionally.
Add water, oil and chicken; allow to simmer for 3 to 4 minutes. Stir in brown sugar and brown sugar. Cover and cook for 2 minutes; turn off heat.
