Molasses Corn Muffins Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1 (8 ounce) package molasses

1 (8 ounce) package cream cheese, softened

2 eggs

2 teaspoons vanilla extract

1 teaspoon vanilla extract

1 cup whole milk

2 slices fresh lemon, diced

1 (16 ounce) can sliced bacon, drained

Directions

Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with non-stick spray.

In a medium bowl, beat cream cheese until fluffy. Mix in molasses and cream cheese mixture; mix again. Spread into prepared muffin cups.

Place lemon slices in a medium skillet. Bring to a boil, then remove from heat. Stir in bacon and set aside.

Place lemon slices in skillet. Cook over medium heat until warm. When lemon juice cools slightly, drizzle with sauce. Stir until a thin layer is formed.
