I waited until the last minute and then doubled the recipe. Its perfect. I added frozen vegetables, a little extra dressing and called it a dinner. Exactly how I intended it to be.

Having trouble finding the right amount of peanut butter? Try adding 1/2 cup peanut butter to the first 6 ingredients in the recipe, mixing after the peanut butter was softened. This makes the peanut butter more creamy to work with and will also make it more appealing to eat.

Truly an excellent soup. I made very few changes (fresh spinach and whole wheat flour) and it still turned out fantastic!

This is a great soup because you can add in almost anything that can be mixed easily, and it will work. I added in a little chicken to it, but it still turned out well. My only negative comment is that 1 cup of brown rice takes too long, so I 2 rdly sauteed the peanuts (30 seconds in the olive oil) in the chicken and then added the rice, peas, carrots, and onions. It turned out great, and I even added some garlic to it.
