2 cups quick-cooking oatmeal
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 cups quick-rising milk
Preheat waffle iron. In a large bowl, combine oatmeal, brown sugar, eggs, and vanilla extract. Stir until well blended.
Heat oven-safe waffle iron until hot. If necessary, coat a waffle iron with vegetable oil; heat briefly, then remove from hot iron. Pour batter into hot waffle iron, flatten slightly, and bake for 30 to 35 minutes or until a wooden toothpick inserted into center of a waffle iron comes out clean.
