1/2 cup butter
1 cup white sugar
2 teaspoons vanilla extract
1 (3 ounce) can evaporated milk
1 teaspoon lemon juice
4 eggs
1 teaspoon lemon zest extract
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 1/2 cups diced apple
1 cup raisins
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2-1/2 quart (8 x 8 inch) loaf pans.
In a large saucepan, combine butter, sugar, vanilla, evaporated milk, lemon juice and eggs. Blend together, and return to a simmer.
Stir the flour, baking powder, baking soda and salt into the creamed mixture. Stir in the diced apple, raisins and lemon zest. Fold in the raisins until well blended. Pour batter into prepared pans.
Bake in the preheated oven for 55 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting with flaky icing.
