1 cup butter
2 tablespoons vegetable oil
1 pound cod
1 cup shredded Italian cheese
1 tablespoon dried oregano
1 teaspoon salt
2 tablespoons white sugar
1 1/2 tablespoons balsamic vinegar
1 tablespoon Cajun seasoning
Preheat oven to 350 degrees F (175 degrees C).
Heat butter or margarine in a large skillet over medium heat. Stir in the oil and cook, stirring constantly, until butter is melted. Spread the melted butter in the bottom of a 9 inch square pan.
In a small saucepan, melt Italian cheese in water; stir into the melted cheese. Mix in oregano, salt and sugar.
In a small saucepan, mix the vinegar and Cajun seasoning. Spread this mixture over the melted cheese.
Bake in preheated oven for 40 minutes, turning every 10 minutes.
