4 tablespoons olive oil
1/2 small onion, diced
1 1/2 tablespoons ketchup
1 tablespoon brown sugar
1 tablespoon apple cider vinegar
1 egg
1 1/2 cups white sugar
1/2 cup water
1/2 teaspoon lemon zest
1 teaspoon peppermint extract
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/4 teaspoon chili powder
In a small saucepan heat olive oil over medium heat. Saute onion until translucent. Stir in ketchup, brown sugar, apple vinegar and egg. Bring to a simmer, removing from heat. Mix in sugar, water, lemon zest, peppermint, salt, black pepper and chili powder. Simmer until table temperature is 140 degrees F (70 degrees C).
In a large bowl, mix white sugar, 1/2 cup sugar, water, lemon zest, peppermint, salt, black pepper, curry powder, and chili powder. Pour mixture evenly over oysters. Serve immediately or refrigerate and serve cold.
