1 (2 pound) whole chicken, cleaned and cut into large pieces
2 (3 ounce) cans minced onion
2 (3 ounce) cans Italian-style diced tomatoes
2 (15 ounce) cans tomato paste
2 (8 ounce) cans chicken broth
1 (4 ounce) can Mexican-style diced tomatoes with green chile peppers
Cut large pieces of chicken into small pieces; place on paper towels to dry.
In a medium bowl, mix tomatoes, tomato paste, chicken broth, Mexican-style diced tomatoes, chicken and chicken broth.
Throw salad into a large bowl and toss to coat. Sprinkle with chiles.
