1 (10 ounce) package frozen chopped spinach
1/2 cup vegetable oil
1 (6 ounce) can yellow squash, drained
2 onions, chopped
1/2 cup long-grain rice
3 eggs, beaten
8 ounces cream cheese, softened
1 cup milk
8 ounces plain yogurt
1 cup chopped raisins
1/2 cup chopped green onions
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan, heat oil over medium heat. Add spinach and stir to serve. Sprinkle squash over spinach and rub cheese into bottom and sides of a 10 inch springform pan.
In a medium bowl, mix together the pancakes, rice, eggs, cream cheese, milk, yogurt, raisins and 1/2 cup green onions.
Pour mixture into prepared springform pan.
Bake at 350 degrees F (175 degrees C) for 3 hours, or until center is almost set.
