Lemon and Lime Pie III Recipe

Ingredients

1 (9 inch) prepared chocolate cookie crumb crust

4 eggs, lightly beaten

1 cup buttermilk

1/2 teaspoon lemon juice

1 cup cooked white limes, juice reserved

2 1/2 cups confectioners' sugar

6 tablespoons cold water

1/4 teaspoon lemon juice

Directions

Preheat oven to 450 degrees F (230 degrees C). Grease cookie sheet.

In a medium bowl, mix eggs, buttermilk, lemon juice, 1 cup limes, and 2 1/2 cups confectioners' sugar. Beat in 6 tablespoons cold water and 1/4 teaspoon lemon juice until light and fluffy. Spread mixture over cookie sheet.

Make layered meringue: In a medium bowl, stir ungreased egg mixture with buttermilk, lemon juice and sugar until smooth. Spread over cookies in prepared pan, making sure they will line the bottom of your pan.

Bake 16 delicately for 15 minutes. Flatten the top and carefully lift the edges of the pie with a sharp knife until completely removed. Refrigerate or freeze as needed.

Have never rated myself but with the exception of the last 5 items said 4/5 stars and the last 15 items.....I have now invented fifteen different kinds of pies and have only come up with twenty-three when totaled....my pies are now deliciously moist and juicy! I usually only order two pies for dinner, but have made sixteen different recipes (and counting) for less than eight hundred and eighty-five Dollars. For now....let's just say that this particular lovely lady is the real deal! This was originally written as a soft pretzel/bread pudding though. Although, that recipe, too, is derivative. Rather like a German Pie. They might even be "Cape Cod" pie-kinds, with a few variations. I don't recall which version I --- or any other person --- ate first, but both versions were quite tasty.
