Fruit Mint Cookies Recipe

Ingredients

1 (18.25 ounce) package vanilla flavored cake mix

1 (1 ounce) package strawberry flavored Jell-O mix

3 eggs

1 cup milk

1 (3 ounce) package cream cheese, softened

1/2 cup sliced fresh strawberries, halved

1/2 cup raisins

Directions

In a medium bowl, mix together cake mix, gelatin mix and eggs. Mix the milk, cream cheese, strawberries and raisins. Pour evenly into the creamed mixture. Refrigerate for 2 hours (the longer the cookie remains firm, the better it will taste) or overnight.

Roll out onto a parchment lined baking sheet. Place 1 tablespoon of the cream cheese mixture into each cylinder, fold over in the center to seal and roll up to stiffen. Drizzle with remaining sugar. Bake in the preheated 350 degrees F (175 degrees C) for 20 minutes, stirring frequently. After 20 minutes, remove cookies from baking sheets. Time cookie turns by flipping onto a floured surface. Dry completely before removing from cookie sheet.

I used Rosemary oil instead of shortening and baked the rolls at 425 for about 20-25 minutes. Unstick the rolls and gently press them into the wet center.
