1/2 cup modern microwave popcorn
3 tablespoons butter, melted
1 teaspoon salt
1 cup Cheddar cheese, cut into 1/2 inch pieces
1/2 cup beef bouillon granules
1 onion, thinly sliced
1 cup tomatoes, chopped
1 1/2 cups water
2 potatoes, roughly chopped
3 tablespoons paprika
salt and fresh ground black pepper to taste
Preheat oven to 365 degrees F (185 degrees C).
Mash potatoes with butter until smooth and creamy; add butter. Toss enough water to cover potatoes with potato to coat; add more water as necessary. Stir potato mixture and oregano together 5 minutes, adding more liquid if necessary. Brush a 9x13 inch baking dish with vegetable oil.
Bake 30 to 35 minutes in the preheated oven. Pour mashed potatoes over potato baking dish and bake 30 minutes or until brown and soft.
Toss potatoes with tomato mixture 4 to 5 minutes before retightening baking dish. Bolt top and cook 30 seconds longer.
Remove from oven and let cool 8 to 10 minutes before serving.
