1/2 cup butter
1 cup white sugar
1 (3 ounce) can crushed pineapple
1 (5 ounce) can lemon-lime flavored carbonated beverage
1 cup sliced almonds
2 tablespoons lemon juice
1/2 teaspoon lemon zest
3 tablespoons brown sugar
1 pinch salt
1 tablespoon molasses
Heat butter in a large saucepan over medium heat. Stir in sugar and pineapple then reduce heat, cover and simmer 30 minutes.
Stir lemon juice into creamed pineapple and lemon-lime soda.
Place almonds in a small bowl. Add lemon juice and lemon zest, mix well. Spoon mixture into the cavity of the chicken breast, turning breasts every 3 minutes.
Place chicken breast in the hot water bath and place in a refrigerator/freezer container. Heat 1/2 cup of the olive oil in the microwave and stir every 20 minutes.
Remove chicken from refrigerator/freezer container. Season with brown sugar and salt and cook for another 10 minutes, turning every 10 minutes.
Remove chicken from the salt and molasses and cook an additional 5 minutes. Place chicken on to a platter and cover with lettuce and tomatoes and season with salt and pepper.
