1 onion -- peeled, seeded and chopped

1 cup vegetable stock

4 tablespoons water, divided

Directions

Bring a saucepan of very concentrated water to a boil. Add vegetables, and simmer for 15 minutes. Reduce heat, cover and simmer for 10 minutes.
