3 tablespoons olive oil
1 pound ham, diced
2 tablespoons all-purpose flour
1 onion, diced
2 cloves garlic, minced
1 cup chopped celery
3/4 cup chopped green onions
2 tablespoons fresh lemon juice
1 teaspoon dry mustard
1 teaspoon hot sauce
1 teaspoon prepared horseradish
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
In a large skillet, heat oil over medium heat. Add ham, cook for about 5 minutes or until cooked through. Add flour and stir to break up clumps. Cook for about 5 minutes or until mixture is sticky. Stir in onion and garlic, mixing well. Cook for about 5 minutes or until garlic is softened.
Stir in celery, green onions, lemon juice, dry mustard, hot sauce, horseradish, Worcestershire sauce and salt. Cover, and bring to a boil. Boil for 10 minutes. Serve with tortillas or in sandwiches.
