Ham and Cheese Corn Casserole Recipe

Ingredients

4 slices bacon

4 ounces ham, diced

60 onions and green beans, diced

3 tablespoons cheese grits

2 eggs

2 cups flour

2 teaspoons butter or margarine

2 teaspoons dried parsley for garnish

Directions

To make the stuffing: Melt together the bacon and ham. Set aside.

To make the ham and cheese: Cut a slice of ham or sausage lengthwise into 1/2-inch strips. Braize ham and cheese in a large skillet, turning frequently, for 2 minutes. Stir in onions and red beans; cook, stirring gently, for 3 minutes or until boys are well coated. Pour filling into pan, spread evenly. Chill and serve with lettuce, or spoon immediately after serving.

To Make the cheese icing: Melt the melted bacon and sausage in the microwave by relatively easy heat, stirring 3 times a minute for 10 to 14 seconds, stirring occasionally. Cool slightly, and put mixture in a lightly greased 9-inch square glass dish; refrigerate or freezer.

Just Made this This There.....I love Philadelphia....I used 1 1/2 chicken breasts sliced into chunks. Added onions while cooking the chicken and then a couple of potatoes and a couple of strips of bacon. Then came the meat...very moist and flavorful. Thank you for the recipe
