Stuffed Shrimp with Tomatoes and Cheddar Cheese Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1 (8 ounce) can cream cheese, softened

1 (6 ounce) can cream cheese, cubed

1 cup shredded sharp Cheddar cheese

1 tomato, chopped

1 (6 ounce) can tomato sauce

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, mix cream cheese, Parmesan cheese, sharp Cheddar cheese, tomato and tomato sauce until combined.

Spread cream cheese mixture over shrimp, tossing well to coat.

Bake at 350 degrees F (175 degrees C) for about 30 minutes, or until shrimp are pink and shrimp are easily flaked with a fork.

This was a great side dish to our asian inspired meal. I used my food processor to chop/slice the vegetables. I added the rest of the ingredients after I toasted the almonds. I did this in the a.m., when my husband was at work, so I could get some more sleep. This was a great dinner, I will definately make it again!

This was a big hit at our party! I think the reason for the short cooking time is because the shrimp was not cooked all the way through. After following the recipe, I noticed that the shrimp was cooking too fast, so I reduced the time to 30 seconds. After the shrimp has cooked for a few minutes you can remove the olive oil and garlic, and it will turn out great!

This was super easy and super tasty. I used the shrimp and asparagus recipes I found on this site, and substituted low-fat mozzarella cheese for the parmesan. I also added some fresh tomatoes. It turned out great! Next time I'm gonna try this with other veggies, maybe chicken too.
