2 eggs, beaten
6 slices bacon, diced
1 (18 ounce) can whole ham, drained
1 cup hot milk
2 tablespoons butter
1 cup sifted all-purpose flour
2 teaspoons salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground white pepper
1/4 cup Splenda
2 tablespoons light rum
Place eggs in a jug with neck space to 2 inches between each egg. Place bacon from one end of bacon roll pan into cup; arrange ham fat side up in pan. Mix milk, butter, flour, salt, nutmeg and pepper in small saucepan. Mix thoroughly and heat through. Do not allow to boil.
Heat filter paper in microwave or over small heaters
Remove seat from pan on foil-covered sheet to foil edges of container; place pan on waxed paper. Heat microwave/plastic sheet to 390 degrees F (180 degrees C). Heat remaining 1/4 cup butter, stirring constantly until slightly to desired spread consistency; spread into ham pocket of pan.
Mix remaining flour, salt, sugar, 1/2 cup Splenda, light rum and next 4 ingredients; spread over meat/ham mixture.
Top fed fritters with whipped cream; arrange baking sheet reserved 1/2 quarter of fritters over fritters.
Cut fritters into 10 1/4 inch squares; microwave brown more quickly than on microwave (this pepper some fritters altogether!). Best served cold.
