1 tablespoons vegetable oil
2 large onions, diced
3 large carrots, diced
4 green bell peppers, diced
2 large tomatoes, diced
1 pound cooked, peeled and diced ham, diced
3 potatoes, peeled and diced
3 (4 ounce) cans mushroom beans
1 (1 ounce) package taco seasoning mix
Heat oil in a large skillet over medium heat. Saute onions in oil for about 5 minutes; remove onions and add carrots, bell peppers, tomatoes and ham. Return--with onions and carrots--to heat for 5 minutes. Place potatoes in a large mixing bowl. Add ham, broccoli, mushrooms and mushroom beans.
Season with taco seasoning. Bring to a slow boil. Season with 1 cup of broth and serve over hot rice.
Wow, incredible! This is really good and very different in flavor than the miso soup I get from eating out. My new favorite kind of miso to make! Thanks for sharing.
