1 piece celery, diced
2 cups chicken broth
1 (10 ounce) package frozen chopped spinach, thawed
1 (3.5 ounce) package instant Thai peanut paste mix
1 package chicken flavored ramen noodles
1/2 cup shredded cabbage
1 cup chicken broth or water
1/2 cup water
1/3 cup minced onion
3 cloves garlic, minced
1 teaspoon vegetable oil
1 tablespoon white sugar
1/4 cup rice vinegar
In a large pot, combine celery, chicken broth, and chopped spinach. Bring to a boil, then reduce heat to medium low and simmer 20 minutes. Stir in the peanut paste, noodles, and cabbage. Cover, reduce heat, and simmer 10 minutes more. Stir in chicken broth, water, onion, and garlic. Bring to a boil. Reduce heat, and simmer 5 minutes more.
Stir in sugar and vinegar, but do not complete the wine and vegetable mixture. Cook over medium heat, stirring occasionally, until thickened, about 10 minutes. Serve hot.
