Texas Chicken Recipe

Ingredients

1 1/2 tablespoons vegetable oil

1 cup all-purpose flour

1 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 small onion, quartered

1 egg, beaten

1 cup thick cut bacon

2 tablespoons brown sugar

1 1/2 cups battered black olives, drained

1/2 teaspoon salt

1 1/2 teaspoons ground black pepper

1/2 teaspoon ground cinnamon

1/2 cup chopped fresh parsley

Directions

Heat oil in a large saucepan over medium heat. Stir in flour and salt. Let sit for 5 minutes.

In a small bowl, mix eggs, bacon, sugar, olives, salt, pepper, and cinnamon.

Heat oil in a large pot over medium heat. Add chicken and saute. Add brown sugar and browning sugar mixture; stir together.

Add chicken mixture to the skillet. Stir fry for 5 minutes, or until chicken is cooked through. Adjust seasonings.

Transfer chicken mixture to a serving dish and garnish with brown sugar, bacon, brown sugar, olives, salt, pepper, cinnamon, parsley. Divide evenly between two serving dishes. Serve hot or cold.

Made this for dinner this evening...really good and tasty! I love the complex flavor, and the right amount of sweetness. As with some of the recipes I have tried, I added fresh garlic, which I considered a nice addition. But I pulled the card from the bowl right before adding the sugar... I found the dried sugar to be too thick, so I subbed lemon juice for the white sugar, and this worked out beautifully. I will make this again--and probably make a variation of it. It was worth trying.
