1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup milk
2 teaspoons white sugar
2 egg whites
1/2 cup butter, softened
1 teaspoon vanilla extract
1 cup flaked coconut
Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch jelly-roll pan.
Combine flour, baking soda, baking powder, and milk in a large bowl. Stir in sugar, egg whites, butter, and vanilla. Beat thoroughly with wire whisk or electric mixer until well blended.
Spread evenly into prepared pan. Bake in center of oven 10 minutes or until golden brown. Reduce oven temperature, and continue baking up to 15 minutes.
Bake in the preheated oven for 30 minutes, until golden or light brown spots appear. Cool completely before removing from pan.
