1 cup unsalted butter
3/4 cup regular white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
4 eggs
2 1/2 cups confectioners' sugar
1/2 cup chopped pecans
1/2 cup vanilla wafer crumbs
Preheat room temperature to 375 degrees F (190 degrees C). Sift together the flour, sugar and vanilla; set aside.Sift in the flour, baking powder and baking soda, one teaspoon at a time. Stir in the pumpkin, eggs and confectioners' sugar mixture. Beat 1 minute with a fork; stir in the pecans and 1/2 cup of vanilla wafer crumbs. Drop batter by rounded tablespoons onto a well greased baking sheet.
Bake in preheated oven for 11 to 12 minutes. Reduce heat to 325 degrees F (165 degrees C) and bake an additional 20 minutes, until golden.
