Lemon Coconut Pie Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1 (8 ounce) package cream cheese, diced

1 1/2 cups white sugar

1 teaspoon lemon extract

1 recipe pastry for a 9 inch double crust pie

1 (8 ounce) package fresh strawberries, sliced

3 cups cherry juice

Directions

Preheat oven to 450 degrees F (220 degrees C).

Beat cream cheese and softened cream cheese until smooth. Mix in sugar and lemon extract. Stir in sliced strawberries and peach. Pour mixture into pie crust. Chill extra hour.

Bake in preheated oven for 45 minutes.

Lower temperature to 350 degrees F (175 degrees C) and continue baking for 50 minutes. Remove from oven and allow to cool completely before removing from pan. Chill remaining pie 3 to 5 hours. Cool completely. Serve with whipped cream.
