1 pound ground beef
2 eggs
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (16 ounce) container sour cream
1 (8 ounce) can Mexican-style beans
In a medium bowl, mix together ground beef, eggs, taco seasoning and refried beans. Mix in beans and sour cream.
Heat a large saucepan over medium heat. Pour in enough water to cover, and cook about 5 minutes on each side. Cover, and simmer for 15 minutes, until beans are tender.
Meanwhile, heat a large skillet over medium heat. Saute taco sauce in skillet for 2 minutes, stirring frequently. Remove from heat, and stir in taco beans and Mexican-style beans
I baked these for company and home and everyone loved them My only criticism is that there's extra fat in the flour and taco filling, which is my first attempt at healthy eating after years of meat and seafood substitution. I also used pre-cooked turkey meat, which was not part of the recipe.
This is a fantastic recipe. It takes a little effort to make, but it's totally worth it. Kids love it, and the guac is the perfect amount. I didn't have any guac, but it tasted great. Thanks!
