1 (9 inch) prepared 9 inch pie crust
1/2 cup butter
1 cup white sugar
2 eggs, lightly beaten
1 cup apple cider
6 tablespoons all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
1 teaspoon lemon juice
1 teaspoon lemon zest
1/4 cup lemon juice
1 cup lemon rind
1 cup pecans
Preheat oven to 350 degrees F (175 degrees C).
Compose pie filling. Sprinkle 1/2 cup butter on bottom of pie; press butter onto pastry to about 1/8 inch thickness. Press remaining butter onto pastry edges.
Fill crust with apple, lemon zest, lemon rind, lemon rind, pineapple, pecans and remaining butter. Stuff crust with fruit.
Bake in preheated oven for 60 minutes or until golden brown on middle. Let cool in pan for 10 minutes.
