3 cups vegetable oil for frying
1 cup heavy whipping cream
1 cup strawberry preserves
In a medium, microwave-safe bowl, mix together vegetable oil, cream, strawberry preserves and fruit preserves. Heat the oil and cream mixture to a boiling point. Continue to boil 20 minutes. Turn the mix off and stir in the strawberry preserves.
Remove the fiddly whipped cream from the pan and shake vigorously until smooth. Spread evenly into the prepared dish.
Fry the fish in the hot oil frying pan until golden brown. Drain on paper towels and serve.
