Stuffed Green Corn Recipe

Ingredients

1 (8 ounce) package green corn bread

1 (16 ounce) package yellow corn bread $3.50

1 tablespoon vegetable oil

1 pound meat race pork roast

1 (8 ounce) can diced green chilies, drained

1 beaten egg

, 2 cups shredded mozzarella cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place the green corn bread, yellow corn bread, green corn bread with tomatoes and green chilies in a large microwave oven dish. Microwave 10 to 12 minutes, stirring frequently until the mixture is evenly moist. Sprinkle the green bread with oil, leaving about ¼ cup of the oil liquid in the pan.

Place the pork roast in the pan, facing up. Place the tomatoes and green chilies over the roast. Bake uncovered for 15 minutes, or until meat is tender.

Meanwhile, melt the mozzarella cheese in a large microwave dish and microwave 15 minutes, stirring constantly. Spread the melted cheese over the pork, and toss with the green corn bread mixture.

Bake uncovered for 30 to 35 minutes, or until internal pork temperature reaches 145 degrees F (70 degrees C).
