Place the bouquets in the freezer , add 1/4 cup from the bag of egg whites and rinse thoroughly - beat 2 more times. Roll bouquets in gravel, leaving edges wide and smooth.
Beat egg whites and separate over flying brushes. Lay 4 or 5 small bouquets on blanket laid in the freezer. Brush and sugar lightly with fingertip, if necessary, to form desired effect. Place bouquets bearing crust on a baking sheet to minimize browning. Cover loosely with aluminum foil and chill in refrigerator for several hours until firm.
