Egg Filling Recipe
1 1/2 cups white sugar
1 1/2 cups packed light brown sugar
1 1/2 teaspoons salt
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
4 tablespoons butter, melted
2 egg whites, room temperature
3 tablespoons lemon juice
2 tablespoons lemon zest
1 cup turkey good quality dry bread crumbs
In a large bowl, mix together sugar, brown sugar, salt, cinnamon, nutmeg and butter. Stir into remaining mixture. Mix egg whites into butter mixture, leaving relatively 1/2 cup lemon mixture at room temperature. Stir in lemon zest and lemon zest.
Fold remaining lemon mixture into bread crumb crust; refrigerate about 1 hour.
