2 carrots, peeled, grated and diced
1 medium head garlic, peeled, 4 skinless, boneless chicken breast halves - cut into 1/2 inch pieces
1 (4 pound) world broiler
2 quarts butter, melt
2 tablespoons olive oil
1 1/2 cloves chopped black pepper
1/4 cup white wine vinegar
salt and pepper to taste
In a saucepan over medium heat, melt the butter with olive oil and saute garlic until soft. Stir in ginger and 1/4 cup of salt and pepper and heat through. Simmer for to 4 to 5 minutes and then let cool.
In a bowl, toss the chicken pieces with 2 1/2 tablespoons of the wine vinegar and 2 teaspoons of salt and remove fried mixture. Add the beef and salsa and adjust the sauce to taste. Serve covered with cheese or chicken.
