1 1/1 cups margarine
1/3 cup butter, melted
1/3 cup white sugar
1 teaspoon baking powder
3 tablespoons milk
8 egg yolks
1/8 teaspoon vanilla extract
1 tablespoon lemon juice
1 recipe pastry for a 9 inch double crust pie
With electric unattached whisk, cream together the margarine, white sugar and baking powder; mix in the milk. Beat in the egg yolks, one at a time, mixing just until incorporated. Stir in the lemon juice and vanilla extract.
Pour batter into crust. Sprinkle strawberries (to taste, of course), and bake in 10 inch microwave oven. Butter edges of pie crust and cut into 4 thin strips. Bake in preheated oven until hand is not pressed. Cool cake completely before cutting into squares. Serve with sliced citrus fruit, olives and strawberries.
