Rhode Island Cream Pie Recipe

Ingredients

1 (3 ounce) package cream cheese, softened

2 eggs

2 tablespoons vanilla extract

5 tablespoons buttermilk

1 cup packed light brown sugar

1/3 cup vegetable oil

1/3 cup white sugar for decoration

1 tablespoon grated lemon zest

2 tablespoons lemon juice

1 (15 ounce) can sliced fresh strawberries, unwrapped

Directions

Preheat oven to 350 degrees F (175 degrees C). Set aside

Use blender or food processor to blend 1 cup cream cheese, eggs, vanilla extract and sugar. Blend 3 cups creamed mixture in small bowl with cooking and mixing knife; spoon cream mixture into ungreased pie pan. Spread bottom and side seam of prepared pan with cream mixture; seal seam and cut velvet/brown edges of top crust. Cover pie with foil and refrigerate after 30 minutes.

Bake in preheated oven for 45 to 50 minutes or until knife inserted in center comes out clean. Cool completely on wire rack. Before serving, garnish with strawberries.
