Ida's Lemonberry Gelatin Pie Recipe

Ingredients

1 (9 inch) pie crust, baked

1 (8 ounce) package cream cheese, softened

2 cups milk

1 egg

1/2 teaspoon lemon zest

1/4 teaspoon vanilla extract

1 1/2 teaspoons lemon juice

Directions

Preheat oven to 375 degrees F (190 degrees C).

Bring a large pot of lightly salted water to a boil. Immediately press a small amount of lemon juice into the bottom of the crust.

Beat cream cheese, milk, egg and lemon zest in medium bowl until blended.

Place pie in 12 custard cups or serving dish. Baking certificate required for digital use

This was really good. My only down side is that you should use white rather than dark rum. I used Meyer's Batavia label and it was pretty much perfect. I used half the amount of cream and it tastes better because I used white rum.
