Apple Cake Recipe

Ingredients

1 (10 ounce) package apple nectar flavored Jell-O

1 (3 ounce) can evaporated milk

1 cup boiling water

1 cup chopped cracked corn kernels

1/4 cup butter

1 teaspoon vanilla extract

1 1/2 teaspoons lemon zest

1 cup white sugar

1 teaspoon ground cinnamon

1/2 teaspoon salt

Directions

Prepare filling by adding boiling water, stirring gently. In a large bowl, mix together the apple nectar, evaporated milk, boiling water, corn, butter, vanilla, lemon zest and sugar. Stir vigorously until all ingredients are combined. Cover and refrigerate for at least 3 hours.

While waiting for the filling to cool, beat cream cheese and egg whites until fluffy. Beat in a small amount of lemon zest. Slowly beat in the flour and salt. Beat in the gelatin mixture until jelly-like. Fold in butter and lemon zest.

When the filling first starts to come out of the bowl, pour it into the prepared pan. Refrigerate for about 5 minutes per side. Cut the top off of each half and place in the prepared pan. Cover and chill in the refrigerator for at least 3 hours.
