Taco Stir Fry

Ingredients

1 (6 ounce) can diced green chile peppers, drained

1 (16 ounce) can refried beans

1/2 cup chopped onion

1/4 cup chopped green bell pepper

1 small head green bell pepper

2 yellow onions, peeled and sliced

1 cup shredded Cheddar cheese

Directions

In a medium nonstick skillet, warm the refried beans in warm water. Lightly oil the pot.

In a medium bowl, stir together the sliced green bell pepper, onion, green pepper, yellow onion and cheese. Drain sauces and stir into the refried beans. Heat until heated through.

Whoa... This used to be so easy :) :o) Last time I tried it, I boiled half the pre-cooked white onion in the water until soft and added it after the carrots, celery, and onion had been poached. This worked, but only for 2 smalllings and ended up being way too expensive. This sounds like a good compromise!
