French Toast II Recipe

Ingredients

1 cup finely chopped onion

1 cup finely chopped celery

1 cup finely chopped green bell pepper

1 cup coarsely chopped onion

1 tablespoon minced fresh ginger

1 teaspoon dried sage

1 teaspoon dried thyme

1 teaspoon dried parsley

1 teaspoon dried oregano

1 teaspoon salt

1 teaspoon ground black pepper

6 eggs, beaten

1/2 cup rum

1 1/2 cups shredded Cheddar cheese

Directions

Heat oven to 450 degrees F (230 degrees C).

Line bread pan or casserole with foil.

Place sliced onion and celery into bread pan.

In a small bowl, mix the bell pepper, ginger, sage, thyme and parsley. Mix gently.

In a medium bowl, mix the eggs, rum, French toast and Cheddar cheese. Mix gently.

In a small bowl, mix the flour, salt, pepper and eggs mixture. Spread mixture evenly into bread pan.

Bake in preheated oven for 40 minutes, or until toothpick inserted in center comes out clean.
