1 1/4 cups cold cream cheese
1 1/4 cups white sugar
1 egg, beaten
1/3 cup vegetable oil
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3 1/2 cups ripe sliced pecans
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the cream cheese, sugar and egg until smooth. Stir in the oil and flour. Beat in the flour mixture alternately with the pecans. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 25 to 35 minutes in the preheated oven, or until very nearly toothpick inserted in center comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
