Pecan Cookies Recipe

Ingredients

1 1/4 cups cold cream cheese

1 1/4 cups white sugar

1 egg, beaten

1/3 cup vegetable oil

1 1/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

3 1/2 cups ripe sliced pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a large bowl, cream together the cream cheese, sugar and egg until smooth. Stir in the oil and flour. Beat in the flour mixture alternately with the pecans. Drop by rounded spoonfuls onto the prepared cookie sheets.

Bake for 25 to 35 minutes in the preheated oven, or until very nearly toothpick inserted in center comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I created this recipe for my family and they loved it. In my opinion, this is the best pecans I have ever purchased. My pecans did not sink as quickly as I would have liked when I first roasted them, but I am satisfied because I did. They were tough but possible. I would have thought that cooking them in water before roasting would have made a difference, but it didn't seem to. I will make this time and time again.
