1 egg
1 1/2 teaspoons butter flavored extract
4 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1 1/2 cups vegetable milk
1/2 cup packed brown sugar
2 teaspoons apple pie spice
1/8 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup diced pineapple
1 cup chopped walnuts
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
Beat egg with a egg white until foamy. Stir in the 1 teaspoon butter flavored extract. Mix in the flour and baking powder. Mix in the milk and brown sugar. Mix in the apple pie spice, applesauce and cinnamon. Heat the egg white with a 1/2 cup margarine, then pour in the egg mixture just until blended. Drop by 3/4 cupfuls onto the cookie sheets.
Bake for 12 to 14 minutes in the preheated oven, until a golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
