2 1/4 pounds potatoes
2 tablespoons butter
2 eggs, beaten
1 (8 ounce) can cream-style corn
6 tablespoons milk
1/4 teaspoon salt's seasonings
1 (8 ounce) package cream cheese, softened
1/4 cup diced onion
2 eggs, beaten
1/2 pound smoked sausage
1 teaspoon Italian seasoning
1 teaspoon salt
6 slices sharp processed cheese food (such as mozzarella, Colby, or Mahi)
Preheat the broiler to 450 degrees F (220 degrees C). Lightly grease a large skillet; place potato onto pan, turning once, to coat all surfaces. Roast in preheated oven for 20 minutes.
Before adding all of the cheese, tightly pack cream cheese according to package directions.
Meanwhile, in a medium bowl, beat eggs, egg yolks, cheese, sausage, Italian seasoning, salt and pepper by hand until smooth. Beat into baked potato in shallow baking dish. Bake, uncovered, at 450 degrees F (220 degrees C) for 25 minutes.
While the potato is baking, melt butter in a small saucepan, stirring constantly. Remove from heat; stir in corn and milk and gently whisk into baked potato.
Mix cream cheese, egg yolk, cheese, sausage and Italian seasoning over a skillet. Drop prepared bread mixture by spoonfuls over the top of the potato. Bake at 450 degrees F (220 degrees C) for 15 minutes. Cool to room temperature. Repeat with remaining cheese sandwich ingredients. Baste frequently with reserved milk and excess egg yolk. Serve substantial portions warm or cold.
