Easy Homemade Red Chocolate Fudge Recipe

Ingredients

1/2 cup butter

1 cup packed light brown sugar

1 egg

1 pint vanilla ice cream, softened

1 cup chocolate syrup

1 cup white sugar

1 cup semi-sweet chocolate chips

1 cup chopped walnuts

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13 inch pan.

In a large bowl, cream together the butter, brown sugar and egg until smooth. Stir in the vanilla ice cream and chocolate syrup. Mix in the sugar, chocolate chips and walnuts. Pour mixture into the prepared pan.

Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the fudge comes out clean. Allow to cool completely.

I my recipe contained soy chocolate chips but measured teaspoon instead of tablespoon. Also used Fernet Beer chip powder. More peanut butter peanut flour than cookie flour and was perfect amount. Took about 25 minutes to whip in mixing until stiff and consistent in texture. Some wrinkles here and there but I chalked that up to the addition of a tablespoon of baking powder. Not ideal but good by any stretch of the imagination.
