1 1/2 cups finely chopped peaches
3/4 cup packed brown sugar
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
1 egg
3 tablespoons margarine, melted
6 tablespoons mint extract
Combine peaches, brown sugar, lemon zest, vanilla extract and egg in medium bowl; mix until well covered. Roll mixture in melted margarine and spread onto jelly-roll pan; refrigerate at least 8 hours before serving.
