Scalloped Tomatoes II Recipe

Ingredients

1 tomato, peeled, cored and chopped

1/2 pound butter, cubed

1 onion, chopped

1 cup frozen rice

1 tablespoon salt

garlic powder

green onions, diced

1 cup raisins

4 cups mashing potatoes, divided

Directions

Place three tomatoes - peeled, cored, and chopped

2 tablespoons butter among tomatoes. Stir together until smooth. Stir in onions, rice 2 tablespoons salt, garlic powder, green onions, raisins, and mashing potatoes. Adjust wine to taste. Refrigerate until ready to use.

Heat oil in large skillet over medium heat. Saute until tender, stirring constantly. Stir in potatoes, salt, and raisins. Simmer, covered, for 45 minutes or until tender.
