1 2/3 cups shredded mozzarella cheese
1 1/2 cups shredded white pepperjack cheese
1/2 pound fresh spinach, stemmed and sliced
1 cup sliced red onion
1 cup chopped fresh mushrooms
2 pounds prosciutto
1 (8 ounce) package cream cheese, softened
1/2 cup butter
1 egg, lightly beaten
1 teaspoon lemon zest
2 cups shredded mozzarella cheese
6 egg yolks, beaten
2 tablespoons bacon grease
2 tablespoons grated Parmesan cheese
1 teaspoon chopped fresh parsley
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch pan.
Mix shredded mozzarella cheese, pepperjack cheese, sliced spinach, onion, mushrooms, prosciutto, cream cheese, butter, egg, lemon zest, mozzarella cheese, Parmesan cheese, parsley and bacon grease in mixing bowl.
Spread 1/4 cup of the mixture in prepared pan. Sprinkle with 1/4 cup of the bacon grease. Repeat with remaining cheese mixture.
Bake in preheated oven for 1 hour. Remove foil and bake an additional 1 hour.
