3 egg whites
1/2 cup white sugar
1/4 teaspoon almond extract
1/4 teaspoon lemon zest
1 teaspoon vanilla extract
4 eggs
1 1/2 cups vegetable oil
1 cup distilled white vinegar
2 tablespoons lemon juice
In a small bowl, beat egg whites until foamy. Stir lemon extract, almond extract and lemon zest into egg white mixture. Fold in vanilla extract and mix until well blended.
Blend together the flour, baking soda and salt. Make a well in the center, and pour in vegetable oil, vinegar and lemon juice. Mix thoroughly. Cover, and refrigerate for one hour.
Preheat oven to 350 degrees F (175 degrees C).
Bake 10 to 12 inch pans in preheated oven for 1 hour, or until set. Cool before
